I waited for this long weekend to cook my first cornish hen!
I love "first times", especially in cooking. I usually have beginner's luck in this area, hehe ;)

In person, the cooked cornish hen is tiny enough to fit a regular-sized plate --- probably good for one hungry, hard-working, chicken-loving lady with good taste (like me? ;).

The United States Department of Agriculture describes the Rock Cornish game hen or Cornish game hen as "a young immature chicken (less than five weeks of age), weighing not more than two pounds ready-to-cook weight, which was prepared from a Cornish chicken or the progeny of a Cornish chicken crossed with another breed of chicken. My cornish hen recipe is a simple one. It's only a dash-and-splash combination of Real Salt (Nature's First Sea Salt), Datu Puti soy sauce, vinegar and McCORMICK black pepper --- another mestizo of seasonings.
The mix was generously strewn with mint and basil leaves. Since I do not have a proper oven, I cooked this in my rice cooker! Ingenious, eh. After a little over an hour, here it is!

Well, everyday is an occasion to thank the Heavenly Father for all the blessings.
